New in the Neighborhood: Acqua Bistecca

Southwest Florida’s dining scene continues to evolve, and one of the more distinctive additions is bringing

together three things that fit our coastal lifestyle particularly well: waterfront views, exceptional steaks, and fresh seafood.

Acqua Bistecca, located at Saltleaf on Estero Bay in Bonita Springs, is an Italian-inspired waterfront restaurant from acclaimed chef and restaurateur Michael Mina. Set directly along Saltleaf Marina, the restaurant combines an upscale dining experience with the relaxed atmosphere that makes dining on the Gulf Coast so special.

And the name tells you quite a bit about what to expect. "Acqua" represents the water and seafood side of the menu, while "Bistecca" represents steak and the restaurant’s focus on cooking over fire. The result is a concept built around land, sea and Italian culinary influences, all overlooking Estero Bay.

A Michael Mina Restaurant Comes to Southwest Florida

For anyone who follows the culinary world, Michael Mina is a familiar name. He is the founder of The MINA Group, a restaurant company behind more than 30 culinary concepts in the United States and internationally. Mina is a James Beard Award-winning chef whose career has included Michelin recognition and restaurants such as Bourbon Steak, MINA’s Fish House, PABU and The Bungalow Kitchen by Michael Mina.

Acqua Bistecca represents The MINA Group’s entry into the Southwest Florida market, which makes the restaurant particularly noteworthy. While our area certainly has no shortage of wonderful restaurants, a nationally recognized chef bringing a new concept to Estero Bay speaks to the continued growth and evolution of the Naples, Bonita Springs and Estero corridor.

The restaurant was created in partnership with London Bay, the developer behind Saltleaf on Estero Bay, with the intention of creating a dining destination that could work equally well for a celebration, a date night, drinks at sunset or simply a great dinner close to home.

Where "Acqua" Meets "Bistecca"

The restaurant’s culinary concept revolves around the combination of water and fire. On the "acqua" side, seafood plays an important role, with fresh fish and raw bar selections reflecting the restaurant’s Gulf Coast location. On the "bistecca" side are chargrilled and wood-fired meats, accompanied by Italian influences throughout the menu. Handmade pastas, seasonal vegetables and antipasti round out the experience.

Rather than positioning itself strictly as an Italian restaurant, seafood restaurant or steakhouse, Acqua Bistecca draws from all three. That makes it an interesting choice when dining with a group where everyone has a different idea of the perfect dinner.

The Italian influence extends beyond pasta. The overall philosophy emphasizes quality ingredients and relatively simple preparations enhanced by thoughtful details. It is upscale dining, but the concept is designed to retain some of the warmth and conviviality associated with gathering around an Italian table.

There is also a full beverage program, including cocktails, mocktails and an extensive wine selection representing Italy, France and the United States. One of the restaurant's more playful offerings is its "Manhattan Project," which allows guests to personalize a Manhattan with assistance from the bar team.

The Setting May Be Just as Memorable as the Food

In Southwest Florida, location matters, and Acqua Bistecca has a particularly good one. The restaurant sits at the edge of Saltleaf Marina overlooking Estero Bay, with views of the marina, mangroves and our famous Southwest Florida sunsets. Expansive terraces connect the indoor dining areas with the waterfront surroundings, making the setting an important part of the overall experience.

The approximately 7,500-square-foot restaurant was designed by Meyer Davis Studio and uses natural materials, light woods, woven textures, sculptural lighting and curated artwork to create a sophisticated coastal atmosphere. Indoor and outdoor areas provide seating for approximately 184 guests, and there is also a private chef’s room designed for smaller gatherings of up to 16 people. It feels polished and special without losing sight of where you are. This is Southwest Florida, after all. Sometimes the best décor is simply a beautiful sunset over the water.

More Than Just Another Restaurant Location

Part of what makes Acqua Bistecca interesting is the larger transformation happening around it.

The restaurant is located within Saltleaf on Estero Bay, a waterfront community encompassing Saltleaf Marina, The Ritz-Carlton Residences, Estero Bay, Saltleaf Golf Preserve, trails and preserved natural areas. The broader development occupies a significant stretch of Estero Bay waterfront, giving the restaurant a setting that feels more like a destination than a typical commercial restaurant location.

For local residents, that also means another opportunity to experience an area of Southwest Florida that historically has not had as many true bayfront dining options as one might expect. It is one of the things I enjoy about watching our area grow. New residential communities often get most of the attention, but the restaurants, shops, entertainment venues and recreational amenities that develop alongside them are equally important. They become part of the lifestyle that ultimately makes people want to live here.

A Restaurant for Celebrations or Simply a Night Out

Acqua Bistecca certainly lends itself to special occasions. The waterfront location, sophisticated interiors and chef-driven menu make it a natural choice for birthdays, anniversaries, date nights and entertaining out-of-town guests. At the same time, the restaurant was intentionally conceived as a neighborhood gathering place rather than somewhere reserved only for milestone occasions. That distinction is important. The best additions to a community are often the places residents find themselves returning to, whether for dinner, cocktails, happy hour or an impromptu evening with friends. Its location also makes Acqua Bistecca convenient for residents throughout Bonita Springs, Estero and North Naples, expanding the already impressive collection of dining options available along the Southwest Florida coast.

For years, people moving to Southwest Florida came primarily for the weather, beaches, boating, golf and laid-back lifestyle. Those things remain major draws, but our dining and entertainment options have become an increasingly important part of the lifestyle story. Acqua Bistecca is a good example of that evolution.

A nationally recognized restaurateur choosing Estero Bay for a new concept reflects the caliber of development occurring throughout this part of Southwest Florida.
